Sundae Brownie Cheesecake

Ingredients

For the Brownie Layer

  • 1 box brownie mix

  • Ingredients listed on the brownie mix package (eggs, oil, water)

For the Cheesecake Layer

  • 2 (8 oz) blocks cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs, room temperature

  • 1 teaspoon vanilla extract

  • ¼ cup sour cream

For the Sundae Topping

  • ½ cup hot fudge sauce

  • ½ cup whipped cream

  • Maraschino cherries, for garnish

  • Chopped nuts, optional

  • Crushed graham crackers, optional

Instructions

1. Prepare the Oven and Pan

  • Preheat the oven to 325°F (165°C).

  • Grease a 9-inch springform pan or line it with parchment paper for easy removal.

2. Make the Brownie Layer

  • Prepare the brownie batter according to the package instructions.

  • Pour the batter evenly into the prepared pan.

  • Bake for 15–18 minutes, just until the brownie is partially set (do not fully bake).

  • Remove from the oven and set aside while preparing the cheesecake layer.

3. Make the Cheesecake Layer

  • In a large bowl, beat the softened cream cheese until smooth and creamy.

  • Add the sugar and mix until fully combined.

  • Beat in the eggs one at a time, mixing on low speed to avoid incorporating too much air.

  • Add vanilla extract and sour cream, mixing until smooth.

4. Assemble and Bake

  • Gently pour the cheesecake batter over the partially baked brownie layer.

  • Smooth the top with a spatula.

  • Bake at 325°F (165°C) for 40–45 minutes, or until the edges are set and the center is slightly jiggly.

5. Cool and Chill

  • Turn off the oven and crack the door slightly. Let the cheesecake cool inside for 30 minutes.

  • Remove from the oven and allow to cool completely at room temperature.

  • Refrigerate for at least 4 hours, preferably overnight, before topping.

6. Add the Sundae Topping

  • Drizzle hot fudge sauce over the chilled cheesecake.

  • Top with whipped cream, maraschino cherries, and optional chopped nuts or crushed graham crackers.
