1 cup buttermilk

1 cup all-purpose flour

½ cup cornstarch

1 tsp paprika

1 tsp garlic powder

½ tsp salt
Frying

Vegetable oil for deep frying
Korean-Style Sauce

3 tbsp gochujang (Korean chili paste)
-
2 tbsp soy sauce
-
2 tbsp honey
-
1 tbsp brown sugar
-
1 tbsp rice vinegar
-
1 tsp sesame oil
-
2 cloves garlic, minced
Savory Waffles
-
1½ cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp salt
-
1 egg
-
1¼ cups milk
-
3 tbsp melted butter
-
2 tbsp chopped green onions
Toppings
-
sesame seeds
-
sliced red chili
-
green onions
-
crispy garlic chips (optional)
Instructions
1. Marinate the Chicken
Place chicken in a bowl with:
-
buttermilk
-
salt
-
pepper
Marinate 30 minutes (or overnight for best flavor).
2. Prepare the Waffle Batter

In a bowl mix:
-
flour
-
baking powder
-
salt
Add:
-
egg
-
milk
-
melted butter
-
green onions
Mix until smooth.
Cook in a waffle iron until golden and crisp.
3. Fry the Chicken
Mix flour, cornstarch, paprika, garlic powder, and salt.
Remove chicken from buttermilk and coat thoroughly.
Heat oil to 350°F / 175°C.
Fry chicken 6–8 minutes until crispy and fully cooked.
Drain on paper towels.
4. Make the Sauce
In a small saucepan combine:

gochujang

soy sauce

honey
-
brown sugar
-
rice vinegar
-
sesame oil
-
garlic
Simmer 2–3 minutes until slightly thick.
Toss fried chicken in the sauce or drizzle on top.
5. Assemble the Dish
Stack waffles on a plate.
Place crispy chicken on top.
Drizzle with sauce and garnish with:

sesame seeds
-
sliced chili
-
green onions
-
crispy garlic chips.
