Braised Beef Short Ribs with Baby Potatoes

Ingredients

Main

  • 1.2 kg beef short ribs

  • 500 g baby potatoes

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 cup beef broth

  • 1 cup red wine (optional but recommended)

  • 2 tbsp tomato paste

Seasoning

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp thyme

  • 1 bay leaf

Finishing

  • fresh thyme or parsley for garnish

1. Season the Ribs

Pat the ribs dry.

Season with:

  • salt

  • pepper

  • paprika.


2. Sear the Meat

Heat olive oil in a heavy pot or Dutch oven.

Sear ribs 3–4 minutes per side until deeply browned.

Remove and set aside.


3. Cook the Aromatics

In the same pot add:

  • onion

  • garlic

Cook until soft and fragrant (about 3 minutes).

Stir in tomato paste and cook another minute.


4. Deglaze

Pour in red wine and scrape the bottom of the pan.

Simmer for 3–5 minutes to reduce slightly.


5. Braise

Add:

  • beef broth

  • thyme

  • bay leaf

Return ribs to the pot.

Cover and simmer on low heat for 2 hours.


6. Add Potatoes

Add baby potatoes and continue cooking 30–40 minutes until:

  • ribs are fork-tender

  • potatoes are soft.


7. Serve

Spoon the rich sauce over the ribs and potatoes.

Garnish with fresh herbs.
