BBQ Chicken with Roasted Potatoes & Broccoli

Ingredients

Chicken

  • 3 boneless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp onion powder

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ cup BBQ sauce

Roasted Potatoes

  • 500 g baby potatoes, halved

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

Broccoli

  • 2 cups broccoli florets

  • 1 tbsp olive oil

  • Pinch of salt

  • Optional: squeeze of lemon juice

Garnish

  • Fresh parsley, chopped


Instructions

1. Roast the Potatoes

Preheat oven to 400°F / 200°C.

In a bowl combine:

  • potatoes

  • olive oil

  • garlic powder

  • paprika

  • salt

  • pepper

Spread on a baking tray (cut side down).

Roast 25–30 minutes until golden and crispy.


2. Cook the Chicken

Pat chicken dry.

Season with:

  • garlic powder

  • smoked paprika

  • onion powder

  • salt and pepper.

Heat olive oil in a skillet over medium-high heat.

Cook chicken 5–6 minutes per side until almost done.

Brush generously with BBQ sauce and cook 2–3 minutes more until caramelized and slightly charred.

Let rest 5 minutes, then slice.


3. Cook the Broccoli

Steam broccoli 3–4 minutes until bright green.

Drizzle with olive oil, sprinkle salt, and optionally add a little lemon juice.


4. Assemble the Plate

Add to a plate:

  • sliced BBQ chicken

  • roasted potatoes

  • broccoli.

Drizzle extra BBQ sauce over the chicken and sprinkle parsley.
