Bok Choy and Mushroom Stir-Fry

Ingredients

Vegetables

  • 4 cups bok choy, washed and halved

  • 1½ cups mushrooms, sliced

  • 3 cloves garlic, minced

  • 2 green onions, chopped

Sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sesame oil

  • 1 tsp rice vinegar

  • ½ tsp sugar

  • ½ tsp black pepper

  • 2 tbsp water

Cooking

  • 2 tbsp vegetable oil

Garnish

  • 1 tsp sesame seeds


Instructions

1. Prepare the Sauce

In a small bowl mix:

  • soy sauce

  • oyster sauce

  • sesame oil

  • rice vinegar

  • sugar

  • black pepper

  • water

Set aside.


2. Cook the Mushrooms

Heat 1 tablespoon oil in a wok or skillet over medium-high heat.

Add mushrooms and cook 3–4 minutes until browned.

Remove and set aside.


3. Stir-Fry the Bok Choy

Add remaining oil.

Cook garlic for 30 seconds until fragrant.

Add bok choy and stir-fry 2–3 minutes until just wilted but still bright green.


4. Combine Everything

Return mushrooms to the pan.

Pour in the sauce.

Stir-fry 1–2 minutes until everything is coated and the sauce slightly thickens.


5. Serve

Garnish with:

  • green onions

  • sesame seeds

Serve hot with:

  • steamed rice

  • noodles

  • grilled tofu or chicken.
