Ingredients

Graham Cracker Crust

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon kosher salt

Whipped Cream Layer

  • 2 cups cold heavy cream

  • ½ cup powdered sugar

  • 2 teaspoons vanilla extract

Pumpkin Cream Cheese Layer

  • 16 ounces cream cheese, softened

  • ½ cup powdered sugar

  • 2 teaspoons vanilla extract

  • 1 (15-ounce) can pumpkin purée (not pumpkin pie filling)

  • 2 teaspoons pumpkin pie spice

  • ¾ teaspoon ground cinnamon

  • ¼ teaspoon kosher salt

Gelatin Stabilizer

  • 3 tablespoons water

  • 2½ teaspoons powdered unflavored gelatin

Optional Topping

  • ¼ cup chopped pecans

Instructions

1. Prepare the Crust

  • In a bowl, combine graham cracker crumbs, melted butter, brown sugar, cinnamon, and salt.

  • Mix until evenly moistened.

  • Press firmly into the bottom of a 9×13-inch dish.

  • Refrigerate for 15–20 minutes to set.

2. Make the Whipped Cream

  • In a cold bowl, beat heavy cream with powdered sugar and vanilla until stiff peaks form.

3. Bloom the Gelatin

  • Sprinkle gelatin over water in a small bowl.

  • Slowly mix in the dissolved gelatin.

  • Top with the remaining whipped cream, smoothing gently.

  • Sprinkle with chopped pecans if using.

6. Chill
