
SUMMER BISCOFF PANCAKES
Soft, fluffy pancakes infused with cinnamon and Biscoff, topped with crushed cookies and a decadent drizzle — the ultimate summer brunch indulgence!
🧾 Ingredients
For the Pancakes:

1½ cups all-purpose flour

1¼ cups milk (any kind)

3 tablespoons melted butter or vegetable oil

¼ cup Biscoff spread, slightly melted

Warm Biscoff spread (for drizzling)

Whipped cream or Greek yogurt

Crushed Biscoff cookies

1. Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
2. Combine the Wet Ingredients
In a separate bowl, whisk the milk, egg, melted butter (or oil), vanilla extract, and melted Biscoff spread until smooth.
3. Make the Batter
Pour the wet mixture into the dry ingredients. Stir just until combined — do not overmix. It’s okay if the batter has a few small lumps; overmixing will make the pancakes tough.
4. Cook the Pancakes
Preheat a non-stick pan or griddle over medium heat and lightly grease it with butter or oil.
Scoop about ¼ cup of batter per pancake onto the surface.
Cook until you see bubbles form on the surface, about 2–3 minutes. Flip and cook the other side until golden brown, another 1–2 minutes.
5. Assemble and Serve
Stack 3–4 pancakes on each plate.
Top with a dollop of whipped cream or Greek yogurt, a generous drizzle of warm Biscoff spread, a sprinkle of crushed cookies, and a whole Biscoff cookie for the finishing touch.
