
How to Make Irresistible Italian Meatball Lasagna Roll-Ups

1 lb Italian sausage (or chicken/turkey sausage)
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
1/4 cup chicken broth
Fresh parsley, chopped (for garnish)
Hoagie rolls or Italian bread (optional, for serving)

1. Brown the sausage
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides
(about 6–8 minutes). Remove from the skillet and set aside. Slice the sausages if desired.
2. Cook the vegetables
Add the remaining olive oil to the same skillet. Add the sliced onions and bell peppers. Cook for 5–7 minutes, stirring occasionally, until
softened and lightly caramelized.
3. Add aromatics and seasoning
Stir in the minced garlic, oregano, basil, red pepper flakes (if using), salt, and black pepper. Cook for about 1 minute until fragrant.
4. Simmer
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Return the sausages to the skillet. Reduce heat to low,
cover, and simmer for 8–10 minutes, until the sausages are fully cooked and the flavors are well combined.
5. Finish and serve
Taste and adjust seasoning if needed. Garnish with fresh parsley and serve hot on its own or tucked into hoagie rolls or Italian bread.
Add a splash of balsamic vinegar for extra depth of flavor.
For a saucier version, stir in a little crushed tomatoes.
Serve with pasta, rice, or a side salad for a complete meal.
