Blackened Salmon Stuffed with Spinach and Parmesan

Ingredients

For the Salmon

  • 4 salmon fillets, skin removed

  • 2 teaspoons paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon cayenne pepper (optional)

  • Salt and black pepper, to taste

For the Spinach Parmesan Stuffing

  • 2 teaspoons olive oil

  • 2 cups fresh spinach, chopped

  • 2 cloves garlic, minced

  • 1/2 cup cream cheese, softened

  • 1/3 cup grated Parmesan cheese

  • Salt and black pepper, to taste

Instructions

  1. Prepare the salmon
    Pat the salmon fillets dry with paper towels. Using a sharp knife, cut a deep pocket into the side of each fillet, being careful not to cut all the way through.

  2. Make the blackening seasoning
    In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper (if using), salt, and black pepper. Rub the seasoning evenly over all sides of the salmon fillets.

  3. Prepare the spinach Parmesan stuffing
    Heat olive oil in a skillet over medium heat. Add the garlic and sauté for about 30 seconds until fragrant.
    Add the chopped spinach and cook until wilted, about 1–2 minutes. Remove from heat and let cool slightly.
    In a bowl, mix the cooked spinach with cream cheese and Parmesan cheese. Season with salt and pepper to taste.

  4. Stuff the salmon
    Spoon the spinach Parmesan mixture evenly into the pockets of the salmon fillets, pressing gently to secure the filling.

  5. Cook the salmon
    Heat a large skillet over medium-high heat and lightly oil it. Place the stuffed salmon fillets in the skillet and cook for 4–5 minutes per side, or until the salmon is blackened on the outside and cooked through on the inside.
    Alternatively, bake at 400°F (200°C) for 12–15 minutes until flaky.

  6. Serve
    Remove from heat and let rest for a minute. Serve hot with lemon wedges or a fresh side salad.
