A Beautifully Vibrant Dessert with a Creamy, Fruity Twist!

This stunning Swiss roll cake is a perfect blend of light sponge, creamy filling, and a glossy purple glaze, decorated with fresh blackberries and edible flowers. It’s a treat for the eyes and the taste buds!


Ingredients:

For the Purple Sponge Cake:

  • 4 large eggs

  • ½ cup (100g) granulated sugar

  • 1 tsp vanilla extract

  • β…” cup (85g) all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • Purple gel food coloring

For the Cream Filling:

  • 1 cup (240ml) heavy whipping cream

  • ¼ cup (30g) powdered sugar

  • 1 tsp vanilla extract

  • ½ cup (120g) blackberry jam or puree (optional, folded in)

For the Purple Glaze:

  • 1 cup (175g) white chocolate chips

  • ½ cup (120ml) heavy cream

  • Purple food coloring

To Decorate:

  • Fresh blackberries

  • Whipped cream

  • Edible purple flowers (like pansies or violets)

  • Mint leaves


Instructions:

1️⃣ Make the Cake:

  • Preheat the oven to 350°F (175°C). Line a 10x15 inch jelly roll pan with parchment paper.

  • Beat the eggs and sugar on high speed for 5 minutes until the mixture becomes fluffy and pale.

  • Add vanilla extract and purple food coloring, then sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.

  • Spread the batter evenly in the prepared pan and bake for 10–12 minutes, or until a toothpick inserted comes out clean.

  • Once baked, immediately roll the cake (with the parchment paper) into a log and let it cool completely.

2️⃣ Prepare the Filling:

  • In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract to stiff peaks.

  • (Optional) Fold in the blackberry jam or swirl it in lightly for a fruity flavor.

3️⃣ Assemble the Cake:

  • Once the cake has cooled, gently unroll it. Spread the cream filling evenly over the cake, then carefully roll it back up.

  • Chill the rolled cake for 30–60 minutes to set.

4️⃣ Prepare the Purple Glaze:

  • Heat the heavy cream until it’s steaming, then pour it over the white chocolate chips. Let it sit for 2 minutes before stirring until smooth.

  • Add a few drops of purple food coloring to achieve your desired hue. Let the glaze cool slightly before pouring it over the chilled Swiss roll.

5️⃣ Decorate the Cake:

  • Pipe whipped cream rosettes on top, and garnish with fresh blackberries, mint leaves, and edible purple flowers for an extra touch of elegance.
