Small buttery tart shells filled with smooth vanilla custard

This stunning Swiss roll cake is a perfect blend of light sponge, creamy filling, and a glossy purple glaze, decorated with fresh blackberries and edible flowers. It’s a treat for the eyes and the taste buds!
4 large eggs
½ cup (100g) granulated sugar
1 tsp vanilla extract
⅔ cup (85g) all-purpose flour
½ tsp baking powder
¼ tsp salt
Purple gel food coloring
1 cup (240ml) heavy whipping cream
¼ cup (30g) powdered sugar
1 tsp vanilla extract
½ cup (120g) blackberry jam or puree (optional, folded in)
1 cup (175g) white chocolate chips
½ cup (120ml) heavy cream
Purple food coloring
Fresh blackberries
Whipped cream
Edible purple flowers (like pansies or violets)
Mint leaves
1️⃣ Make the Cake:
Preheat the oven to 350°F (175°C). Line a 10x15 inch jelly roll pan with parchment paper.
Beat the eggs and sugar on high speed for 5 minutes until the mixture becomes fluffy and pale.
Add vanilla extract and purple food coloring, then sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.
Spread the batter evenly in the prepared pan and bake for 10–12 minutes, or until a toothpick inserted comes out clean.
Once baked, immediately roll the cake (with the parchment paper) into a log and let it cool completely.
2️⃣ Prepare the Filling:
In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract to stiff peaks.
(Optional) Fold in the blackberry jam or swirl it in lightly for a fruity flavor.
3️⃣ Assemble the Cake:
Once the cake has cooled, gently unroll it. Spread the cream filling evenly over the cake, then carefully roll it back up.
Chill the rolled cake for 30–60 minutes to set.
4️⃣ Prepare the Purple Glaze:
Heat the heavy cream until it’s steaming, then pour it over the white chocolate chips. Let it sit for 2 minutes before stirring until smooth.
Add a few drops of purple food coloring to achieve your desired hue. Let the glaze cool slightly before pouring it over the chilled Swiss roll.
5️⃣ Decorate the Cake:
Pipe whipped cream rosettes on top, and garnish with fresh blackberries, mint leaves, and edible purple flowers for an extra touch of elegance.
