Garlic Butter Shrimp with Fresh Herbs

Ingredients (Serves 2–3)

  • 400 g (14 oz) large shrimp, peeled and deveined (tails on optional)

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4 cloves garlic, finely minced

  • 1 tbsp lemon juice (freshly squeezed)

  • 1 tsp lemon zest

  • Salt, to taste

  • Black pepper, to taste

  • ½ tsp paprika or chili flakes (optional)

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh thyme or microgreens (for garnish)

Optional for plating (as in the image):

  • Mixed fresh herbs or baby greens

  • Thinly sliced bell peppers

  • Herb oil or olive oil drizzle


Instructions

  1. Prepare the shrimp
    Pat the shrimp dry with paper towels. Season both sides lightly with salt, black pepper, and paprika.

  2. Heat the pan
    Heat olive oil in a large skillet over medium-high heat until hot but not smoking.

  3. Sear the shrimp
    Add shrimp in a single layer. Cook for about 1½–2 minutes per side until pink, opaque, and lightly caramelized. Remove shrimp from the pan and set aside.

  4. Make the garlic butter sauce
    Reduce heat to medium. Add butter to the same pan.
    Once melted, add minced garlic and sauté for 30–45 seconds until fragrant (do not brown).

  5. Finish the sauce
    Stir in lemon juice and lemon zest. Season with salt and pepper to taste.

  6. Combine
    Return shrimp to the pan. Toss gently to coat in the garlic butter sauce. Cook for another 30 seconds.

  7. Garnish & serve
    Sprinkle with fresh parsley and thyme. Serve immediately.

  • Pair with mashed potatoes, risotto, or crusty bread

  • Perfect as an appetizer or light main course
