Garlic Butter Shrimp with Fresh Herbs
Ingredients (Serves 2–3)

400 g (14 oz) large shrimp, peeled and deveined (tails on optional)
-
2 tbsp olive oil
-
3 tbsp unsalted butter
-
4 cloves garlic, finely minced
-
1 tbsp lemon juice (freshly squeezed)
-
1 tsp lemon zest
-
Salt, to taste
-
Black pepper, to taste
-
½ tsp paprika or chili flakes (optional)
-
2 tbsp fresh parsley, finely chopped
-
1 tbsp fresh thyme or microgreens (for garnish)
Optional for plating (as in the image):

Mixed fresh herbs or baby greens
-
Thinly sliced bell peppers
-
Herb oil or olive oil drizzle
Instructions

Prepare the shrimp
Pat the shrimp dry with paper towels. Season both sides lightly with salt, black pepper, and paprika. -
Heat the pan
Heat olive oil in a large skillet over medium-high heat until hot but not smoking. -
Sear the shrimp
Add shrimp in a single layer. Cook for about 1½–2 minutes per side until pink, opaque, and lightly caramelized. Remove shrimp from the pan and set aside. -
Make the garlic butter sauce
Reduce heat to medium. Add butter to the same pan.
Once melted, add minced garlic and sauté for 30–45 seconds until fragrant (do not brown). -
Finish the sauce
Stir in lemon juice and lemon zest. Season with salt and pepper to taste. -
Combine
Return shrimp to the pan. Toss gently to coat in the garlic butter sauce. Cook for another 30 seconds. -
Garnish & serve
Sprinkle with fresh parsley and thyme. Serve immediately.
