Ingredients

Crust Layer

  • 1 cup crushed digestive biscuits or graham crackers

  • 3 tbsp melted unsalted butter

  • 2 tbsp finely chopped pistachios

Berry Jam Layer

  • 1½ cups mixed berries (blackberries, raspberries, blueberries)

  • 2 tbsp honey or maple syrup

  • 1 tbsp lemon juice

  • 1 tbsp chia seeds (to thicken)

Berry Cheesecake Layer

  • 1½ cups cream cheese (softened)

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract

  • ½ cup thick berry purée (fresh or frozen)

  • ¼ cup whipped cream

Vanilla Cheesecake Layer

  • 1½ cups cream cheese

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

  • ¼ cup whipped cream

Pistachio Cheesecake Layer

  • 1½ cups cream cheese

  • ¼ cup powdered sugar

  • 2 tbsp pistachio paste or ¼ cup ground pistachios

  • ¼ cup whipped cream

Toppings (Optional but Gorgeous)

  • Fresh blackberries

  • Chopped pistachios

  • Edible flowers


Instructions

  1. Make the Crust:
    Combine crushed biscuits, melted butter, and chopped pistachios. Press firmly into the base of dessert rings or ramekins. Chill until firm.

  2. Prepare the Berry Jam:
    In a small saucepan, cook berries, honey/maple syrup, and lemon juice for 5–7 minutes until soft and jammy. Lightly mash, stir in chia seeds, and let cool completely.

  3. Berry Cheesecake Layer:
    Beat cream cheese, powdered sugar, vanilla, and berry purée until silky. Gently fold in whipped cream. Spoon over crust and chill for 30 minutes.

  4. Add the Jam Layer:
    Spoon a layer of the cooled berry jam over the berry cheesecake. Smooth it out evenly. Chill another 30 minutes.

  5. Vanilla Cheesecake Layer:
    Whip cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream. Add this layer on top of the jam. Chill 30 minutes.

  6. Pistachio Cheesecake Layer:
    Mix cream cheese, sugar, and pistachio paste (or ground pistachios) until creamy. Fold in whipped cream. Spoon on top and smooth the surface. Chill for 2–4 hours or overnight for best results.

  7. Finishing Touches:
    Carefully unmold the cheesecake cups. Garnish with fresh blackberries, chopped pistachios, and edible flowers. Serve chilled and enjoy every dreamy bite!
