Savory Salmon and Crab Layered Cake

Ingredients

For the Savory Sponge:

  • 4 eggs

  • 60 g all-purpose flour

  • 40 g cornstarch

  • 1 tbsp olive oil

  • 1 pinch of salt

For the Seafood Filling:

  • 200 g smoked salmon

  • 150 g crab meat (canned or freshly cooked)

  • 150 g cooked and peeled shrimp

  • 200 g cream cheese (Philadelphia or mascarpone)

  • 1 tbsp lemon juice

  • 1 tbsp fresh dill or chopped chives

  • Salt and pepper to taste

For Decoration:

  • ~100 g additional cream cheese (for coating)

  • Whole shrimp & smoked salmon slices

  • Fresh dill or chives

  • Optional: Lumpfish or salmon roe for garnish


Instructions

1. Preheat the Oven:

Preheat to 350°F (175°C).
Grease and line a rectangular baking dish (~9x5 inches) with parchment paper.

2. Make the Savory Sponge:

In a bowl, whisk the eggs until light and frothy.
Gradually add flour, cornstarch, olive oil, and salt.
Mix gently until smooth and uniform.
Pour into the prepared baking dish and spread evenly.

3. Bake the Sponge:

Bake for 15–20 minutes, or until golden and springy.
Cool completely in the pan before handling.

4. Prepare the Filling:

In a mixing bowl, combine cream cheese, lemon juice, and dill or chives.
Season with salt and pepper.
Fold in the smoked salmon, crab, and shrimp gently until well combined.

5. Assemble the Cake:

Remove the cooled sponge from the dish and cut it into two equal layers.
Spread half the seafood filling over the bottom layer.
Top with the second layer and spread the remaining filling evenly over the top.

6. Decorate:

Coat the top and sides with extra cream cheese for a smooth finish.
Garnish with whole shrimp, salmon slices, fresh herbs, and optional roe for a festive look.

7. Chill & Serve:

Refrigerate for at least 1 hour before slicing.
Serve chilled as an elegant and savory appetizer.
