No-Bake Peanut Butter Chocolate Icebox Cake

Ingredients

For the Cake Layers

  • 18 oz graham crackers (about 4 sleeves; chocolate or plain)

  • 1½ cups hot fudge sauce

Peanut Butter Cheesecake Filling

  • 1½ cups heavy whipping cream

  • 20 oz cream cheese, softened (preferably Challenge brand)

  • ½ cup peanut butter

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 16 full-size Reese’s, coarsely chopped

Whipped Cream Topping

  • 1 cup heavy whipping cream

  • 2 tbsp powdered sugar

  • ½ tsp vanilla extract

Graham Cracker Crumble

  • 1 cup graham cracker crumbs (use any leftover crackers)

  • 2 tbsp melted unsalted butter

  • 2 tbsp sugar


Instructions

  1. Build the Base
    Line the bottom of a 9x13-inch baking dish with a single layer of graham crackers, breaking as needed to fit.

  2. Hot Fudge Layer
    Spread half of the hot fudge sauce evenly over the graham crackers. Set aside.

  3. Prepare the Peanut Butter Cheesecake Layer

    • Whip the heavy cream until stiff peaks form; set aside.

    • In another bowl, beat the cream cheese on medium-high speed for 2–3 minutes until fluffy.

    • Add peanut butter and mix until fully incorporated.

    • Beat in powdered sugar until smooth, then mix in vanilla.

    • Gently fold in the whipped cream, followed by the chopped Reese’s.

  4. Assemble the Cake

    • Spread half of the peanut butter cheesecake filling over the fudge layer.

    • Add another layer of graham crackers, then spread the remaining hot fudge.

    • Layer on the rest of the cheesecake mixture, followed by a final layer of graham crackers.

  5. Whipped Cream Topping
    Whip cream, powdered sugar, and vanilla until stiff peaks form. Spread evenly over the final graham cracker layer.

  6. Graham Cracker Crumble
    In a small bowl, mix graham cracker crumbs with melted butter and sugar. Sprinkle generously over the whipped cream layer.

  7. Chill
    Cover and refrigerate for at least 8 hours (overnight is ideal) to let the layers set.

  8. Optional Garnish
    Top with additional chopped Reese’s before serving for extra indulgence.
