A dreamy celebration of strawberries and cream—fluffy vanilla cake layered with sweet strawberries and billowy whipped frosting. Simple, stunning, and so delicious!

Ingredients

For the Vanilla Cake Layers:

  • 2½ cups all-purpose flour

  • 2½ teaspoons baking powder

  • ½ teaspoon salt

  • 1 cup unsalted butter, at room temperature

  • 1¾ cups granulated sugar

  • 4 large eggs

  • 1 tablespoon vanilla extract

  • 1 cup whole milk

For the Whipped Cream Frosting:

  • 3 cups cold heavy whipping cream

  • ¾ cup powdered sugar

  • 1 tablespoon vanilla extract

For the Filling & Topping:

  • 2½ cups fresh strawberries, sliced

  • Whole strawberries (for garnish)

  • Optional: 2 tablespoons strawberry jam (for extra flavor and moisture between layers)

🧁 Instructions

1. Bake the Vanilla Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, and salt.

  3. In a large mixing bowl, beat butter and sugar until light and fluffy (about 3–4 minutes).

  4. Add eggs, one at a time, beating well after each. Mix in the vanilla extract.

  5. Alternate adding the dry ingredients and milk, beginning and ending with flour. Mix just until combined—don’t overmix.

  6. Divide the batter evenly between the pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

2. Make the Whipped Cream Frosting

  1. In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.

  2. Keep refrigerated until ready to use.

3. Assemble the Cake

  1. Place one cooled cake layer on a serving plate or cake stand. Spread a generous layer of whipped cream on top.

  2. Optional: Add a thin layer of strawberry jam for extra flavor.

  3. Arrange a thick layer of sliced strawberries over the cream.

  4. Top with the second cake layer and frost the entire cake with the remaining whipped cream.

  5. Decorate the top with whole strawberries and extra swirls of whipped cream if desired. Garnish around the base for a full, elegant finish.

πŸ“ Tips for Perfection

  • For juicier filling, macerate sliced strawberries with 1–2 tablespoons of sugar for 15 minutes before using.

  • For the cleanest slices, chill the assembled cake for at least 1 hour before cutting.
