Fresh fruit for topping (e.g., mango, berries, banana, kiwi)

Mix Ingredients
In a bowl or jar, combine the chia seeds, coconut milk, and sweetener. Stir well to prevent clumping. -
Let it Sit
Cover and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and form a pudding-like texture. -
Stir Again
After the first 10-15 minutes in the fridge, give the mixture another good stir to break up any clumps, then let it continue chilling. -
Serve
Once thickened, top with your favorite fresh fruits. You can also add shredded coconut, granola, or a drizzle of nut butter. -
