Spinach, Mushroom & Tomato Omelette

A hearty and nutritious omelette packed with rich flavors!

2 eggs
½ tbsp butter or olive oil
¼ cup cherry tomatoes, halved
¼ cup mushrooms, sliced
¼ cup fresh spinach
Salt & black pepper (to taste)
¼ tsp garlic powder (optional)
1 tbsp cheese (optional)
🍽️ Step by Step:
1️⃣ Sauté the Vegetables:
Heat a pan over medium heat and add butter or olive oil.
Add mushrooms and cook for 3-4 minutes until browned.
Add cherry tomatoes and spinach, cooking until softened.
2️⃣ Cook the Omelette:
In a bowl, whisk the eggs with salt, black pepper, and garlic powder.
Pour the eggs over the vegetables in the pan.
Let cook for 2-3 minutes until the edges set.
3️⃣ Fold & Serve:
If using cheese, sprinkle it on one side of the omelette.
