1 tbsp lemon juice

1 tbsp cornstarch + 2 tbsp water (slurry)
Chocolate Ganache:

200 g dark chocolate, finely chopped

150 ml heavy cream

1 tbsp unsalted butter (for shine)

1️⃣ Make the Chocolate Sponge

Line a dome-shaped bowl with plastic wrap.

Repeat layering.

Finish with final cake layer on top.

Gently press, chill 2–4 hours.
