A warm, spiced apple cake studded with nuts and topped with a buttery caramel drizzle—perfect for autumn gatherings, holidays, or anytime you want a comforting dessert with a twist.
Ingredients
π° For the Cake:
-
1½ cups all-purpose flour
-
1 teaspoon baking powder
-
½ teaspoon baking soda
-
½ teaspoon ground cinnamon
-
¼ teaspoon ground nutmeg
-
¼ teaspoon salt
-
½ cup unsalted butter, softened
-
½ cup brown sugar
-
¼ cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
½ cup sour cream or Greek yogurt
-
2 medium apples, peeled and chopped
-
½ cup chopped pecans or walnuts (plus extra for topping)
π― For the Caramel Sauce:
-
½ cup brown sugar
-
¼ cup unsalted butter
-
2 tablespoons heavy cream
-
Pinch of salt
-
½ teaspoon vanilla extract
πͺ Instructions
1. Prepare the Caramel Sauce
In a small saucepan over medium heat, melt the butter and brown sugar together, stirring frequently.
Add the heavy cream and a pinch of salt, bring to a gentle boil, and let it simmer for 2–3 minutes, stirring constantly.
Remove from heat and stir in vanilla extract. Let it cool slightly while you make the cake.
2. Make the Cake Batter
-
Preheat oven to 350°F (175°C). Grease and line a 9-inch round or loaf cake pan.
-
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
-
In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
-
Add the eggs, one at a time, beating well after each addition. Mix in vanilla extract.
-
Stir in the sour cream or yogurt.
-
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
-
Fold in the chopped apples and nuts.
3. Bake the Cake
Pour the batter into the prepared pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
4. Finish & Decorate
Once the cake is cooled, drizzle generously with the cooled caramel sauce.
Garnish with fresh apple slices, extra chopped pecans, or a sprinkle of crumble topping for texture and visual appeal.
π Serving Tips
-
Pairs perfectly with a cup of hot cider or chai.
-
For extra indulgence, serve warm with a scoop of vanilla ice cream.
β¨ This cake is a cozy showstopper—ideal for fall, but irresistible all year round.
