Garlic Herb Salmon & Roasted Veggies

A wholesome, flavor-packed dish featuring garlic-rosemary salmon, roasted carrots & broccoli, steamed green beans, and soft-boiled eggs, all served with a refreshing lemon dill yogurt sauce.


πŸ₯˜ Ingredients:

For the Garlic Herb Salmon:

  • 2 salmon fillets (about 150-200g each)

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)

  • ½ tsp salt

  • ¼ tsp black pepper

For the Roasted Veggies:

  • 2 medium carrots, sliced

  • 1 cup broccoli florets

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the Steamed Green Beans:

  • 1 cup green beans, trimmed

  • ½ tsp olive oil

  • Salt, to taste

For the Soft-Boiled Eggs:

  • 2 eggs

  • Water for boiling

For the Lemon Dill Yogurt Sauce:

  • ½ cup Greek yogurt

  • 1 tbsp lemon juice

  • 1 tsp fresh dill, chopped

  • ½ tsp garlic powder

  • ½ tsp honey (optional)

  • Salt & pepper, to taste


πŸ”₯ Instructions:

1️⃣ Roast the Carrots & Broccoli

  1. Preheat oven to 200°C (400°F).

  2. Toss carrots & broccoli with olive oil, salt, and pepper.

  3. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway.


2️⃣ Grill the Garlic Herb Salmon

  1. Mix garlic, rosemary, olive oil, lemon juice, salt, and pepper in a bowl.

  2. Rub over the salmon fillets and let sit for 10 minutes.

  3. Heat a grill pan or skillet over medium heat.

  4. Cook salmon skin-side down first for 4-5 minutes, then flip and cook for another 3-4 minutes, until golden and flaky.


3️⃣ Steam the Green Beans

  1. Bring water to a boil in a steamer.

  2. Steam green beans for 2-3 minutes until tender but crisp.

  3. Toss with olive oil & salt before serving.


4️⃣ Make the Soft-Boiled Eggs

  1. Bring a pot of water to a gentle boil.

  2. Carefully lower eggs and cook for 6 minutes.

  3. Transfer to an ice bath for 2 minutes, then peel and slice.


5️⃣ Prepare the Lemon Dill Yogurt Sauce

  1. Whisk together Greek yogurt, lemon juice, dill, garlic powder, honey, salt, and pepper until smooth.


🍽️ Assemble & Serve:

  1. Plate the grilled salmon, roasted carrots & broccoli, steamed green beans, and soft-boiled eggs.

  2. Drizzle with lemon dill yogurt sauce or serve on the side.

  3. Garnish with extra fresh dill & lemon wedges.
