
Garlic Herb Salmon & Roasted Veggies
A wholesome, flavor-packed dish featuring garlic-rosemary salmon, roasted carrots & broccoli, steamed green beans, and soft-boiled eggs, all served with a refreshing lemon dill yogurt sauce.
π₯ Ingredients:
For the Garlic Herb Salmon:

2 salmon fillets (about 150-200g each)

2 cloves garlic, minced

1 tbsp olive oil
-
1 tbsp lemon juice
-
1 tsp fresh rosemary, chopped (or ½ tsp dried)

½ tsp salt
-
¼ tsp black pepper
For the Roasted Veggies:

2 medium carrots, sliced
-
1 cup broccoli florets
-
1 tbsp olive oil
-
½ tsp salt
-
¼ tsp black pepper
For the Steamed Green Beans:

1 cup green beans, trimmed
-
½ tsp olive oil
-
Salt, to taste
For the Soft-Boiled Eggs:
-
2 eggs
-
Water for boiling
For the Lemon Dill Yogurt Sauce:

½ cup Greek yogurt
-
1 tbsp lemon juice
-
1 tsp fresh dill, chopped
-
½ tsp garlic powder
-
½ tsp honey (optional)
-
Salt & pepper, to taste
π₯ Instructions:
1οΈβ£ Roast the Carrots & Broccoli

Preheat oven to 200°C (400°F).

Toss carrots & broccoli with olive oil, salt, and pepper.

Spread on a baking sheet and roast for 20-25 minutes, flipping halfway.
2οΈβ£ Grill the Garlic Herb Salmon

Mix garlic, rosemary, olive oil, lemon juice, salt, and pepper in a bowl.

Rub over the salmon fillets and let sit for 10 minutes.

Heat a grill pan or skillet over medium heat.

Cook salmon skin-side down first for 4-5 minutes, then flip and cook for another 3-4 minutes, until golden and flaky.
3οΈβ£ Steam the Green Beans

Bring water to a boil in a steamer.

Steam green beans for 2-3 minutes until tender but crisp.

Toss with olive oil & salt before serving.
4οΈβ£ Make the Soft-Boiled Eggs

Bring a pot of water to a gentle boil.

Carefully lower eggs and cook for 6 minutes.

Transfer to an ice bath for 2 minutes, then peel and slice.
5οΈβ£ Prepare the Lemon Dill Yogurt Sauce

Whisk together Greek yogurt, lemon juice, dill, garlic powder, honey, salt, and pepper until smooth.

Plate the grilled salmon, roasted carrots & broccoli, steamed green beans, and soft-boiled eggs.

Drizzle with lemon dill yogurt sauce or serve on the side.
