Beetroot & Goat Cheese Verrines ๐ŸŒฑ๐Ÿง€


A colorful, creamy, and nutritious appetizer that’s perfect for entertaining or enjoying as a healthy snack.

โœ… Ingredients:

  • 1 medium cooked beetroot (peeled and chopped)

  • 150g (about 5 oz) fresh goat cheese ๐Ÿง€

  • 1 tablespoon Greek yogurt (plain)

  • 1 teaspoon honey ๐Ÿฏ

  • 2 tablespoons chopped walnuts ๐ŸŒฐ

  • 1 tablespoon chopped fresh chives ๐ŸŒฟ

  • Salt & pepper to taste

  1. Prepare the beetroot purée:
    Blend the cooked beetroot in a food processor or blender until smooth. Season with a pinch of salt and pepper if desired. Set aside.

  2. Make the cheese mixture:
    In a bowl, mix the goat cheese, Greek yogurt, and honey until creamy and smooth. Adjust the texture with more yogurt if needed. Season lightly with salt and pepper.

  3. Assemble the verrines:
    In small serving glasses or jars, layer a spoonful of the cheese mixture, followed by a layer of beetroot purée. Repeat the layers once more or until the glass is full.

  4. Add the toppings:
    Sprinkle the top with chopped walnuts and fresh chives for extra flavor and crunch.

  5. Chill and serve:
    Refrigerate for at least 30 minutes before serving. Enjoy cold as a refreshing appetizer or light starter.
