For the Sides:
2 eggs, soft-boiled
1/2 avocado
1/2 cup fresh spinach
1/2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tomato, sliced

Bring water to a boil, gently lower eggs, and cook for 7-8 minutes.
