
Spicy Shakshuka (Poached Eggs in Tomato Sauce)

A rich, flavorful Middle Eastern-inspired dish perfect for breakfast, brunch, or even dinner!

4 large eggs

1 tbsp olive oil

1 small onion, diced

1 bell pepper, chopped

2 garlic cloves, minced

1 can (14 oz) crushed tomatoes

1 tsp paprika

½ tsp ground cumin

½ tsp chili flakes (optional, for heat)

½ tsp salt

¼ tsp black pepper

2 tbsp chopped fresh parsley or green onions (for garnish)

Sauté the Vegetables:

Heat olive oil in a large skillet over medium heat.

Add diced onion and bell pepper, cooking for 4–5 minutes until softened.

Stir in minced garlic and cook for another 1 minute until fragrant.

Add Spices and Tomatoes:

Stir in paprika, cumin, chili flakes (if using), salt, and pepper.

Pour in the crushed tomatoes and mix well.

Let the sauce simmer gently for 10–15 minutes, uncovered, until it thickens slightly.

Poach the Eggs:

Make small wells in the sauce using a spoon and crack an egg into each well.

Cover the skillet with a lid and simmer for 5–7 minutes, or until egg whites are set and yolks are still a bit runny (or to your preference).

Remove from heat and sprinkle with fresh parsley or chopped green onions.
