Zesty Mexican Taco Meatloaf is a bold twist on classic comfort food. It combines seasoned ground beef, taco spices, peppers, and cheese into
a juicy, flavor-packed loaf baked with a tangy salsa topping. This dish delivers the warmth of traditional meatloaf with the vibrant taste of
tacos - perfect for family dinners or meal prep.
900 g (2 lbs) ground beef (80/20 for best moisture)
1 small onion, finely diced
1 red bell pepper, finely chopped
3 cloves garlic, minced
1 cup crushed tortilla chips or breadcrumbs
2 large eggs
1 packet taco seasoning (or 2 tablespoons homemade blend)
½ cup salsa
1 tablespoon tomato paste
1 teaspoon ground cumin
½ teaspoon smoked paprika
1 cup shredded cheddar or Mexican blend cheese
1 teaspoon salt (adjust if taco seasoning contains salt)
½ teaspoon black pepper
½ cup salsa
½ cup shredded cheese
1 tablespoon chopped cilantro (optional)

Preheat oven to 190°C (375°F).
Lightly grease a loaf pan or line a baking sheet with parchment paper.
In a large mixing bowl, combine ground beef, onion, bell pepper, and garlic.
Add crushed tortilla chips (or breadcrumbs), eggs, taco seasoning, salsa, tomato paste, cumin, smoked paprika, salt, and pepper.
Mix gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.
Fold in shredded cheese.
Form the mixture into a loaf shape and place in the prepared pan.
Spread ½ cup salsa evenly over the top.
Bake uncovered for 45–55 minutes, or until internal temperature reaches 75°C (165°F).
Remove from oven.
Sprinkle shredded cheese over the top.
Return to oven for 5–8 minutes until cheese is melted and bubbly.
Let the meatloaf rest for 10 minutes before slicing.
Garnish with chopped cilantro if desired.
Serve with Mexican rice or cilantro lime rice.

Top slices with sour cream, guacamole, or extra salsa.
Use leftovers in tacos or burritos the next day.
For extra moisture, substitute half the beef with ground turkey and add 2 tablespoons milk.
