  • ½ cup salsa

  • 1 tablespoon tomato paste

  • 1 teaspoon ground cumin

  • ½ teaspoon smoked paprika

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1 teaspoon salt (adjust if taco seasoning contains salt)

  • ½ teaspoon black pepper

For the Topping

  • ½ cup salsa

  • ½ cup shredded cheese

  • 1 tablespoon chopped cilantro (optional)

Instructions

Step 1: Prepare the Oven

  1. Preheat oven to 190°C (375°F).

  2. Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2: Mix the Meatloaf

  1. In a large mixing bowl, combine ground beef, onion, bell pepper, and garlic.

  2. Add crushed tortilla chips (or breadcrumbs), eggs, taco seasoning, salsa, tomato paste, cumin, smoked paprika, salt, and pepper.

  3. Mix gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.

  4. Fold in shredded cheese.

Step 3: Shape and Bake

  1. Form the mixture into a loaf shape and place in the prepared pan.

  2. Spread ½ cup salsa evenly over the top.

  3. Bake uncovered for 45–55 minutes, or until internal temperature reaches 75°C (165°F).

Step 4: Add Cheese Topping

  1. Remove from oven.

  2. Sprinkle shredded cheese over the top.

  3. Return to oven for 5–8 minutes until cheese is melted and bubbly.

Step 5: Rest and Serve

  1. Let the meatloaf rest for 10 minutes before slicing.

  2. Garnish with chopped cilantro if desired.

Serving Suggestions

  • Serve with Mexican rice or cilantro lime rice.

  • Add a side of black beans or corn salad.

  • Top slices with sour cream, guacamole, or extra salsa.

  • Use leftovers in tacos or burritos the next day.

Tips

  • For extra moisture, substitute half the beef with ground turkey and add 2 tablespoons milk.

  • Add diced jalapeños for more heat.

  • Do not skip the resting time — it helps the juices redistribute and prevents crumbling.

  • If using lean beef, mix in 1–2 tablespoons olive oil to maintain tenderness.

Storage

  • Store in an airtight container in the refrigerator for up to 4 days.

  • Freeze slices individually for up to 3 months.

  • Reheat in the oven at 175°C (350°F) until warmed through.

Zesty Mexican Taco Meatloaf brings together the comforting texture of classic meatloaf with the vibrant spices and flavors of tacos — hearty,

satisfying, and full of personality.
