Ingredients:

2 large eggs, scrambled

½ cup cherry tomatoes, halved

¼ avocado, mashed
-
½ cup whole mushrooms, sautéed
-
½ cup sautéed kale or spinach
-
1 tbsp olive oil or ghee
-
Salt & pepper to taste
-
Fresh parsley or cilantro (for garnish)
Instructions:
1. Sauté the Veggies:

Heat 1 tbsp of olive oil or ghee in a medium skillet over medium heat.

Add the whole mushrooms to the skillet and sauté for about 3-4 minutes, until they start to soften and release their juices.

Add the kale or spinach and cook for another 2-3 minutes until the greens are wilted and tender. Season with a pinch of salt and pepper. Set the veggies aside.
2. Scramble the Eggs:

In a bowl, crack the 2 eggs and whisk them lightly with a pinch of salt and pepper.

In the same skillet (or use a clean one), cook the scrambled eggs over medium heat for about 2-3 minutes, stirring occasionally until they’re cooked to your preferred consistency.
3. Assemble the Power Plate:

On a plate, arrange the scrambled eggs as the base.

Add the sautéed mushrooms and greens next to the eggs.

Place the cherry tomatoes on the side, and top with the mashed avocado.
4. Garnish & Serve:

Garnish with fresh parsley or cilantro for a burst of freshness.
