Lemon Garlic Shrimp Bowl with Brown Rice & Veggies

Ingredients
For the Shrimp:
🍀 6-8 large shrimp, peeled and deveined
πŸ§‚ Salt & pepper, to taste
πŸ§„ 1 clove garlic, minced
πŸ‹ 1 tsp olive oil
πŸ‹ 1/2 tsp lemon juice
For the Bowl:
🍚 1/2 cup cooked brown rice
πŸ₯¦ 1/2 cup steamed broccoli
πŸ₯‘ 1/4 avocado, sliced
πŸ… 1/4 cup cherry tomatoes, halved
🌱 Fresh cilantro for garnish
Instructions
1️⃣ Cook the Brown Rice:
Rinse 1/4 cup of brown rice and cook it in 1/2 cup of water until tender (about 25-30 minutes). Set aside.
2️⃣ Cook the Shrimp:
Season the shrimp with salt, pepper, garlic, olive oil, and lemon juice.
Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
3️⃣ Prepare the Veggies:
Steam the broccoli until tender. Slice the avocado and cherry tomatoes.
4️⃣ Assemble the Bowl:
Start with brown rice as the base.
Arrange the cooked shrimp, broccoli, avocado, and cherry tomatoes on top.
Garnish with fresh cilantro.
5️⃣ Serve & Enjoy:
