1 large sweet onion (such as Vidalia or Walla Walla), sliced into 1/2-inch-thick rings
8 oz shredded mozzarella cheese
1 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
2 large eggs , beaten
1 cup panko breadcrumbs (or regular breadcrumbs)
Vegetable oil , for frying (about 2 inches deep)
For the Garlic Butter Sauce:
1/2 cup unsalted butter , melted
2 cloves garlic , minced
1 tablespoon fresh parsley , chopped
1 teaspoon lemon juice
Pinch of red pepper flakes (optional, for heat)
Salt to taste
Step-by-Step Instructions
Step 1: Prepare the Onions
Separate the onion slices into individual rings, discarding the small inner rings or saving them for another use.
Place a generous amount of shredded mozzarella in the center of each onion ring, pressing it slightly to help it stay in place.
Step 2: Create the Breading Station
In three shallow bowls, set up your breading station:
Bowl 1: Mix the flour , garlic powder , onion powder , paprika , salt , and pepper .
Bowl 2: Beat the eggs and place them in the second bowl.
Bowl 3: Spread out the panko breadcrumbs .
Step 3: Bread the Onion Rings
Dip each mozzarella-stuffed onion ring into the flour mixture , shaking off any excess.
Dip the floured onion ring into the beaten eggs , ensuring it’s fully coated.
Coat the onion ring generously in panko breadcrumbs , pressing lightly to adhere.
Place the breaded onion rings on a plate and refrigerate for 15–20 minutes to firm up the coating before frying.
Step 4: Fry the Onion Rings
Pour enough vegetable oil into a deep skillet or pot to reach about 2 inches deep. Heat the oil over medium-high heat until it reaches 350°F (175°C) .
Carefully add the breaded onion rings to the hot oil in batches, being careful not to overcrowd the pan.
Fry each batch for 3–4 minutes per side , or until golden brown and crispy. Use tongs to flip them halfway through cooking.
Remove the fried onion rings from the oil and place them on a paper towel-lined plate to drain excess grease.
Step 5: Make the Garlic Butter Sauce
In a small saucepan, melt the butter over low heat.
Stir in the minced garlic , parsley , lemon juice , red pepper flakes (if using), and a pinch of salt . Cook for 1–2 minutes , stirring constantly, until fragrant but not browned.
Transfer the garlic butter to a small bowl and keep warm while assembling the platter.
Step 6: Serve and Enjoy!
Arrange the crispy mozzarella-stuffed onion rings on a serving platter.
Drizzle or serve the garlic butter sauce on the side for dipping.
Garnish with additional fresh parsley if desired, and serve immediately while hot and melty.
