Vegan Banana Pancakes

Vegan Banana Pancakes ๐ŸŒ๐Ÿฅž (Open for recipe)
Ingredients:
- ½ cup mashed banana (about 1 medium banana)
- 1 cup almond or soy milk
- 2 tbsp neutral oil
- 2-3 tbsp sugar
- 1 tsp vanilla extract
- 1 and 1/4 cups plain or whole wheat flour
- 1 tbsp baking powder
- ½ tsp salt

Instructions:
1. Mix Batter:
- Mash the banana.
- Combine with milk, oil, sugar, and vanilla.
- Add flour, baking powder, and salt. Mix until well combined..

2. Cook:
- Heat a griddle or pan over medium-high.
- Drop 1/4 cup of batter onto the griddle.
- Cook until bubbles form, then flip and cook until golden brown (1-2 minutes each side).

3. Serve:
- Top with vegan butter, syrup, and more bananas.

Tip: Substitute flour with almond flour for a gluten-free version.
