Instructions

Step 1: Cook the pasta shells
-
Bring a large pot of salted water to a boil.
-
Cook jumbo shells until just al dente (1–2 minutes less than package directions).
-
Drain and rinse with cool water to stop cooking.
-
Set aside on a tray to prevent sticking.
Step 2: Prepare the meat filling
-
Heat olive oil in a skillet over medium heat.
-
Add onion and cook for 2–3 minutes until softened.
-
Add garlic and cook for 30 seconds until fragrant.
-
Add ground meat and cook until browned, breaking it up with a spoon.
-
Season with salt, pepper, Italian seasoning, and chili flakes.
-
Remove from heat and let cool slightly.
Step 3: Mix the filling
-
In a large bowl, combine cooked meat, ricotta, mozzarella, Parmesan, egg, and fresh herbs.
-
Mix until well combined and creamy.
Step 4: Assemble the dish
-
Preheat oven to 190°C / 375°F.
-
Spread marinara sauce evenly over the bottom of a baking dish.
-
Fill each pasta shell with the meat mixture and arrange open-side up in the dish.
-
Spoon a little sauce over the shells.
-
Sprinkle generously with mozzarella cheese.
Step 5: Bake
-
Cover loosely with foil and bake for 25 minutes.
-
Remove foil and bake for another 10–15 minutes, until cheese is melted and lightly golden.
-
Let rest for 5 minutes before serving.
Serve
-
Garnish with fresh parsley or basil.
-
Serve warm with garlic bread or a green salad.
Tips
-
Do not overcook the shells or they will tear when stuffed.
-
This dish freezes well before or after baking.
-
Can be made vegetarian by replacing meat with spinach and mushrooms.
