Description

These no-bake mango cheesecake cups are light, creamy, and refreshing. They feature a buttery biscuit base, a smooth cream cheese filling, and sweet, juicy mango layers on top. Ingredients (Makes 4–6 small cups)

Biscuit Base

  • 120 g digestive biscuits or graham crackers, finely crushed

  • 60 g unsalted butter, melted

Cheesecake Filling

  • 200 g cream cheese, softened

  • 200 ml heavy whipping cream, cold

  • 60 g powdered sugar (adjust to taste)

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice (optional, for balance)

Mango Layer

  • 2 ripe mangoes, peeled and diced

  • 2–3 tablespoons mango puree (optional, for extra color and flavor)

Topping (Optional)

  • Whipped cream

  • Fresh mint or sage leaves

Step 1: Prepare the biscuit base

  1. In a bowl, mix crushed biscuits with melted butter until evenly coated.

  2. Spoon the mixture into the bottom of each serving cup.

  3. Press down gently with a spoon to form a compact base.

  4. Refrigerate for 10–15 minutes to set.


Step 2: Make the cheesecake filling

  1. In a large bowl, beat the cream cheese until smooth and creamy.

  2. Add powdered sugar, vanilla extract, and lemon juice. Mix until well combined.

  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.

  4. Gently fold the whipped cream into the cream cheese mixture until smooth and airy.


Step 3: Assemble the cups

  1. Spoon or pipe the cheesecake filling over the chilled biscuit base.

  2. Add a layer of diced mango and drizzle with mango puree if using.

  3. Repeat layers if desired for a layered look.


Step 4: Chill and finish

  1. Refrigerate the cheesecake cups for at least 2 hours (or overnight for best texture).

  2. Before serving, top with whipped cream and garnish with fresh herbs or extra mango pieces.
