Low-calorie honey-mustard salmon with roasted asparagus



This Honey Mustard Salmon is sweet, tangy, and perfectly tender, paired with roasted asparagus for a light yet satisfying meal.

Ingredients

For the Salmon

  • 2 salmon fillets

  • 2 tablespoons honey

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil

For the Roasted Asparagus

  • 1 bunch asparagus, trimmed

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

Instructions

1.  Preheat the oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2.  Prepare the honey mustard glaze

In a small bowl, whisk together honey, Dijon mustard, salt, black pepper, and olive oil.

3.  Season the asparagus

Place the asparagus on the baking sheet. Drizzle with olive oil and season with salt and pepper. Spread into a single layer.

4.  Add the salmon

Place the salmon fillets on the same baking sheet, skin-side down. Brush the honey mustard mixture generously over the top of each fillet.

5.  Bake

Roast for 12–15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender with lightly crisp edges.

6.  Serve

Remove from the oven and serve immediately.
