Description

These elegant puff pastry bites feature a crisp, buttery pastry base topped with a rich, creamy mushroom sauce. Perfect as an appetizer, brunch item, or party snack, they combine flaky texture with deep umami flavor.


Ingredients (Makes 8–10 pieces)

For the pastry base

  • 1 sheet puff pastry, thawed

  • 1 egg, beaten (for egg wash)

For the creamy mushroom topping

  • 200 g mushrooms (button or cremini), sliced

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 1 small shallot or onion, finely chopped

  • 2 cloves garlic, minced

  • 150 ml heavy cream

  • 30 g grated Parmesan cheese

  • Salt, to taste

  • Black pepper, freshly ground

  • Optional: a pinch of nutmeg

For garnish

  • Fresh parsley, finely chopped

  • Extra cracked black pepper

Step 1: Prepare the puff pastry

  1. Preheat the oven to 200°C / 400°F.

  2. Roll out the puff pastry on a lightly floured surface.

  3. Use a round cutter (6–7 cm diameter) to cut circles.

  4. Place the circles on a baking tray lined with parchment paper.

  5. Using a smaller cutter or knife, gently score a smaller circle inside each pastry (do not cut through).

  6. Brush the tops with egg wash.

  7. Bake for 15–18 minutes, until golden brown and puffed.

  8. Remove from oven and gently press down the center to create a cavity. Set aside.


Step 2: Make the creamy mushroom mixture

  1. Heat butter and olive oil in a skillet over medium heat.

  2. Add chopped onion and sauté for 2–3 minutes until soft.

  3. Add garlic and cook for 30 seconds until fragrant.

  4. Add mushrooms and cook for 5–7 minutes, until browned and moisture evaporates.

  5. Season with salt and black pepper.

  6. Pour in the heavy cream and simmer for 3–4 minutes until slightly thickened.

  7. Stir in Parmesan cheese and optional nutmeg.

  8. Remove from heat once creamy and glossy.


Step 3: Assemble

  1. Spoon the creamy mushroom mixture into the center of each puff pastry base.

  2. Return to the oven and bake for 5–7 minutes to heat through.


Garnish & Serve

  • Sprinkle with fresh parsley and cracked black pepper.

  • Serve warm for best texture and flavor.


Tips

  • For extra richness, add a small amount of cream cheese to the mushroom sauce.

  • Works well with thyme or rosemary if you want a more herby profile.

  • Can be prepared in advance and reheated briefly in the oven.
