Steamed Pork Buns (Baozi)

Ingredients (Makes 12 buns)

For the Dough:

  • 3 cups (375g) all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon instant yeast

  • ¾ cup (180ml) warm water

  • 1 tablespoon vegetable oil

For the Filling:

  • 400g (14 oz) ground pork

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 2 green onions, finely chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon cornstarch

  • 2 tablespoons water or chicken broth

Step 1: Make the Dough

  1. In a large bowl, mix flour, sugar, and yeast.

  2. Add warm water and oil. Stir until dough forms.

  3. Knead for 8–10 minutes until smooth.

  4. Cover and let rise for 1–1.5 hours until doubled in size.


Step 2: Prepare the Filling

  1. In a bowl, combine ground pork, garlic, ginger, and green onions.

  2. Add soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper.

  3. Mix cornstarch with water and add to the mixture.

  4. Stir until well combined and slightly sticky.


Step 3: Shape the Buns

  1. Punch down the dough and divide into 12 equal pieces.

  2. Roll each piece into a 4-inch circle.

  3. Place 1–2 tablespoons of filling in the center.

  4. Pleat the edges and pinch to seal.


Step 4: Steam

  1. Place buns on parchment paper squares.

  2. Arrange in a steamer basket, leaving space between them.

  3. Steam over boiling water for 12–15 minutes.

  4. Turn off heat and let rest 5 minutes before opening lid.


Tips for Soft & Fluffy Bao

  • Do not open the steamer immediately to prevent collapsing.

  • Use warm (not hot) water to activate yeast.

  • You can freeze uncooked buns and steam later.
