🛒 Ingredients
Main Ingredients:

2 cups cooked jasmine rice (preferably day-old)

200 g (7 oz) medium shrimp, peeled and deveined

1/2 fresh pineapple, hollowed out (reserve flesh)
-
1 cup pineapple chunks (from the pineapple)
-
1/2 cup diced ham or Chinese sausage (optional)
-
2 cloves garlic, minced
-
1/4 cup diced onion
-
1/2 cup mixed vegetables (peas, carrots)
-
1/4 cup diced red bell pepper
-
2 tablespoons vegetable oil
-
2 eggs, lightly beaten
Seasoning:
-
2 tablespoons soy sauce
-
1 tablespoon oyster sauce
-
1 teaspoon fish sauce
-
1/2 teaspoon curry powder (optional, Thai-style)

1/2 teaspoon sugar
-
Salt and pepper to taste
Garnish:

Sliced green onions
-
Fresh cilantro
-
Lime wedges
-
Roasted cashews (optional)

Step 1: Prepare the Pineapple Bowl

Cut the pineapple in half lengthwise.

Carefully scoop out the flesh, leaving the shell intact.

Dice the pineapple flesh into small cubes.

Set the hollowed shell aside for serving.
Step 2: Cook the Shrimp

Heat 1 tablespoon oil in a large pan or wok over medium-high heat.

Add shrimp and cook 1–2 minutes per side until pink and opaque.

Remove and set aside.
Step 3: Scramble the Eggs

In the same pan, add a little oil if needed.

Pour in beaten eggs.

Scramble lightly until just set.

Remove and set aside.
Step 4: Stir-Fry the Aromatics

Add remaining oil to the pan.

Sauté garlic and onion until fragrant (about 30 seconds).

Add diced ham/sausage (if using) and cook 1–2 minutes.
Step 5: Add Rice & Seasoning

Add cooked rice and break up clumps.
-
Stir-fry for 2–3 minutes.
-
Add soy sauce, oyster sauce, fish sauce, sugar, and curry powder.

Mix well to evenly coat the rice.
Step 6: Add Vegetables & Pineapple

Stir in mixed vegetables and red bell pepper.
-
Add pineapple chunks.
-
Return shrimp and scrambled eggs to the pan.

Stir-fry everything together for another 2–3 minutes.
Step 7: Serve

Spoon the fried rice into the hollowed pineapple shell.

Garnish with green onions, cilantro, and roasted cashews.
-
Serve with lime wedges on the side.
