Hearty Chicken Potato Soup
Ingredients (Serves 4–6)
Main Ingredients:

2 tablespoons olive oil or butter
-
1 medium onion, diced
-
2 cloves garlic, minced
-
2 medium carrots, sliced
-
2 celery stalks, chopped
-
2 medium potatoes, peeled and cubed
-
2 cups cooked chicken breast, shredded or cubed
-
4 cups chicken broth
-
1 cup water (if needed)
-
½ teaspoon salt (adjust to taste)
-
½ teaspoon black pepper
-
¼ teaspoon red pepper flakes (optional)
-
2 tablespoons chopped fresh parsley
Optional for Creamier Version:

½ cup heavy cream or milk
Instructions

Step 1: Sauté the Vegetables
-
Heat olive oil in a large pot over medium heat.
-
Add onion and cook for 2–3 minutes until softened.
-
Add garlic, carrots, and celery. Cook for another 3–4 minutes.
Step 2: Add Potatoes & Broth
-
Add diced potatoes to the pot.
-
Pour in chicken broth (and water if needed).
-
Bring to a boil, then reduce heat to low.
-
Simmer for 15–20 minutes until potatoes are fork-tender.
Step 3: Add Chicken & Season
-
Stir in cooked chicken.
-
Season with salt, pepper, and red pepper flakes.
-
Simmer for another 5 minutes.
Step 4: Finish & Serve
-
Stir in fresh parsley.
-
Add cream or milk if you prefer a richer soup.
-
Taste and adjust seasoning.

Serve hot.
Tips
-
For deeper flavor, use homemade chicken stock.
-
Add a squeeze of lemon juice before serving for brightness.
-
You can mash a few potatoes to naturally thicken the soup.
