Hearty Chicken Potato Soup

Ingredients (Serves 4–6)

Main Ingredients:

  • 2 tablespoons olive oil or butter

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, sliced

  • 2 celery stalks, chopped

  • 2 medium potatoes, peeled and cubed

  • 2 cups cooked chicken breast, shredded or cubed

  • 4 cups chicken broth

  • 1 cup water (if needed)

  • ½ teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • ¼ teaspoon red pepper flakes (optional)

  • 2 tablespoons chopped fresh parsley

Optional for Creamier Version:

  • ½ cup heavy cream or milk

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and cook for 2–3 minutes until softened.

  3. Add garlic, carrots, and celery. Cook for another 3–4 minutes.


Step 2: Add Potatoes & Broth

  1. Add diced potatoes to the pot.

  2. Pour in chicken broth (and water if needed).

  3. Bring to a boil, then reduce heat to low.

  4. Simmer for 15–20 minutes until potatoes are fork-tender.


Step 3: Add Chicken & Season

  1. Stir in cooked chicken.

  2. Season with salt, pepper, and red pepper flakes.

  3. Simmer for another 5 minutes.


Step 4: Finish & Serve

  1. Stir in fresh parsley.

  2. Add cream or milk if you prefer a richer soup.

  3. Taste and adjust seasoning.

  4. Serve hot.


Tips

  • For deeper flavor, use homemade chicken stock.

  • Add a squeeze of lemon juice before serving for brightness.

  • You can mash a few potatoes to naturally thicken the soup.
