Spicy Garlic Butter Shrimp
Ingredients (Serves 3–4)

1 lb (450g) large shrimp, peeled and deveined (tails on optional)

3 tablespoons unsalted butter

1 tablespoon vegetable oil

4 cloves garlic, minced

3–4 dried red chilies (or 1 teaspoon chili flakes)

1 teaspoon paprika
-
1/2 teaspoon salt
-
1/2 teaspoon black pepper

1 teaspoon sugar
-
1 tablespoon fish sauce (optional, for extra depth)

1 tablespoon oyster sauce (optional)
-
1 tablespoon lime juice
-
1/4 cup crispy fried shallots
-
Fresh cilantro leaves (for garnish)
Instructions

1. Prepare the Shrimp
Pat shrimp dry with paper towels.
Season lightly with salt, pepper, and paprika.
2. Cook the Shrimp
Heat vegetable oil and 2 tablespoons butter in a large skillet over medium-high heat.
Add garlic and dried chilies. Sauté until fragrant (about 30 seconds).
Add shrimp in a single layer. Cook for 1–2 minutes per side until pink and opaque.
Do not overcook.
3. Season the Sauce
Add sugar, fish sauce, and oyster sauce (if using).
Stir well to coat the shrimp.
Add remaining butter and lime juice. Toss gently until glossy.
4. Finish and Serve
Transfer to a serving plate.
Top generously with crispy fried shallots and fresh cilantro.
Serve immediately.
