
Pickled Cucumber with Red Onion
A quick, tangy, and refreshing side dish!
Ingredients:

1 English cucumber, thinly sliced
-
½ red onion, thinly sliced
-
½ cup vinegar (white or apple cider)
-
½ cup water
-
¼ cup sugar
-
1 tsp salt
-
1 tsp black peppercorns
-
1 tsp red pepper flakes (optional, for a spicy kick)
Instructions:

Prepare the Veggies:
Slice the cucumber and red onion thinly and place them in a clean jar or bowl. -
Make the Brine:
In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and red pepper flakes. Heat until sugar and salt dissolve. Remove from heat and let cool slightly. -
Pour & Chill:
Pour the warm brine over the cucumber and onion. Press the veggies down to fully submerge. -
Marinate:
Let it sit for at least 1 hour in the fridge. Best flavor after 4–6 hours. -
Enjoy:
Serve with sandwiches, grilled meats, salads, or as a crunchy snack!
