Pickled Cucumber with Red Onion

A quick, tangy, and refreshing side dish!


Ingredients:

  • 1 English cucumber, thinly sliced

  • ½ red onion, thinly sliced

  • ½ cup vinegar (white or apple cider)

  • ½ cup water

  • ¼ cup sugar

  • 1 tsp salt

  • 1 tsp black peppercorns

  • 1 tsp red pepper flakes (optional, for a spicy kick)


Instructions:

  1. Prepare the Veggies:
    Slice the cucumber and red onion thinly and place them in a clean jar or bowl.

  2. Make the Brine:
    In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and red pepper flakes. Heat until sugar and salt dissolve. Remove from heat and let cool slightly.

  3. Pour & Chill:
    Pour the warm brine over the cucumber and onion. Press the veggies down to fully submerge.

  4. Marinate:
    Let it sit for at least 1 hour in the fridge. Best flavor after 4–6 hours.

  5. Enjoy:
    Serve with sandwiches, grilled meats, salads, or as a crunchy snack!
