Ingredients

Instructions

  1. Mix olive oil, honey, lime juice, garlic, paprika, chili powder, salt, and pepper.

  2. Marinate chicken for at least 30 minutes.

  3. Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until fully cooked.

  4. In a bowl, combine rice with lime juice and cilantro.

  5. Mix avocado, black beans, corn, cilantro, lime juice, salt, and pepper.

  6. Simmer the honey lime sauce ingredients in a small saucepan for 2–3 minutes until slightly thickened.

  7. Using a food ring or small bowl, layer rice first, then the avocado-bean mixture.

  8. Slice the chicken and arrange on top.

  9. Drizzle generously with honey lime sauce.

  10. Garnish with lime wedges and cilantro.
