Ingredients

For the Chicken

1½ lb (700g) boneless, skinless chicken breast, cut into bite-sized pieces

1 tablespoon olive oil

1 tablespoon butter
-
1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder
-
½ teaspoon paprika
For the Vegetables
-
2 cups broccoli florets
-
4 cups fresh spinach
-
½ medium onion, sliced
-
4 garlic cloves, minced
For the Sauce
-
½ cup chicken broth
-
1 tablespoon lemon juice
-
1 teaspoon Italian seasoning
-
½ teaspoon dried oregano
-
1 tablespoon butter
Garnish

Fresh parsley, chopped

Instructions

Step 1: Season the Chicken
In a bowl, combine the chicken pieces with salt, pepper, garlic powder, and paprika. Toss well until evenly coated.
Step 2: Sear the Chicken
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Add the chicken and cook for 5–7 minutes, turning occasionally, until golden brown and cooked through.
Transfer the chicken to a plate and set aside.
Step 3: Cook the Vegetables
In the same skillet, add the sliced onion and cook for 2–3 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Stir in the broccoli and chicken broth. Cover and cook for about 3 minutes until the broccoli becomes tender-crisp.
Add the spinach and stir until wilted.
Step 4: Make the Sauce
Add the lemon juice, Italian seasoning, oregano, and remaining tablespoon of butter.
Stir until the butter melts and the sauce lightly coats the vegetables.
Step 5: Combine Everything
Return the chicken to the skillet.
Toss everything together and cook for another 2–3 minutes to allow the flavors to blend.
Step 6: Serve
Sprinkle with fresh parsley and cracked black pepper.
Serve immediately on its own or with rice, quinoa, mashed potatoes, or pasta.
