Ingredients
For the Pork Chops

4 bone-in pork chops (about 2.5 cm thick)

1 tablespoon olive oil

1 tablespoon butter
-
1 teaspoon garlic powder
-
1 teaspoon paprika
-
Salt and black pepper to taste
For the Mushroom Sauce
-
250 g mushrooms, sliced
-
2 tablespoons butter
-
3 cloves garlic, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
½ teaspoon thyme
-
¼ cup grated Parmesan cheese
-
Salt and pepper to taste
For the Roasted Vegetables
-
500 g baby potatoes, halved
-
2 carrots, peeled and cut into sticks
-
2 cups broccoli florets
-
2 tablespoons olive oil
-
Salt and pepper
Instructions
Step 1: Roast the Vegetables

Preheat oven to 200°C (400°F).

Toss potatoes and carrots with olive oil, salt, and pepper.

Spread on a baking sheet.

Roast for 25 minutes.

Add broccoli during the last 10 minutes of roasting.
Step 2: Cook the Pork Chops
-
Pat pork chops dry.
-
Season both sides with garlic powder, paprika, salt, and pepper.

Heat olive oil and butter in a large skillet over medium-high heat.

Sear pork chops for 4–5 minutes per side until golden brown.

Reduce heat and cook another 3–5 minutes until internal temperature reaches 63°C (145°F).

Remove and keep warm.
Step 3: Make the Mushroom Sauce

In the same skillet melt butter.

Add mushrooms and cook until browned.

Stir in garlic and cook for 30 seconds.

Pour in chicken broth and scrape up the browned bits.

Add cream and thyme.
-
Simmer for 3–4 minutes.

Stir in Parmesan cheese.

Season with salt and pepper.
Step 4: Finish

Return pork chops to the skillet briefly.

Spoon mushroom sauce over the pork.
-
Serve alongside roasted potatoes, carrots, and broccoli.
