Ingredients

For the Pie Crust

  • 2½ cups all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1 cup cold unsalted butter, cubed

For the Blackberry Filling

  • 4 cups fresh blackberries

  • ¾ cup granulated sugar

  • 2 tablespoons cornstarch

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

For Finishing

  • 1 egg, beaten

  • 1 tablespoon milk

  • Coarse sugar for sprinkling (optional)

Instructions

Step 1: Make the Dough

  1. Combine flour, sugar, and salt.

  2. Cut in cold butter until the mixture resembles coarse crumbs.

  3. Add ice water gradually until dough comes together.

  4. Divide into two discs.

  5. Wrap and refrigerate for at least 30 minutes.

Step 2: Prepare the Filling

  1. In a bowl combine:

    • Blackberries

    • Sugar

    • Cornstarch

    • Lemon juice

    • Vanilla

  2. Gently toss until evenly coated.

Step 3: Form the Tart Shells

  1. Preheat oven to 190°C (375°F).

  2. Roll out dough on a lightly floured surface.

  3. Cut circles large enough to fit a muffin tin.

  4. Press dough into 12 muffin cups.

Step 4: Fill the Tarts

  1. Spoon blackberry filling into each shell.

  2. Roll remaining dough.

  3. Cut thin strips and create a lattice pattern on top, just like in the picture.

Step 5: Egg Wash

  1. Mix egg and milk.

  2. Brush over the crust.

  3. Sprinkle with coarse sugar if desired.

Step 6: Bake

  1. Bake for 25–30 minutes.

  2. Crust should be golden brown and filling bubbling.

  3. Cool in pan for 10 minutes.

  4. Transfer to a wire rack.
