Ingredients

For the Sponge Cake Layer

  • 4 large eggs

  • 120 g granulated sugar

  • 120 g cake flour

  • 30 g melted butter

For the Cheesecake Layer

  • 450 g cream cheese, softened

  • 100 g sugar

  • 2 eggs

  • 120 ml heavy cream

  • 1 teaspoon vanilla extract

For the Whipped Cream Layer

  • 500 ml heavy whipping cream

  • 50 g powdered sugar

  • 1 teaspoon vanilla extract

Fruit Topping

  • Fresh strawberries, halved

  • Cherries

  • Mandarin orange segments

  • Blueberries

  • Mint leaves

Berry Sauce

  • 1 cup mixed berries

  • 3 tablespoons sugar

  • 2 tablespoons water

  • 1 teaspoon lemon juice

Decoration

  • Powdered sugar for dusting

Instructions

Step 1: Bake the Sponge Layer

  1. Preheat oven to 170°C (340°F).

  2. Beat eggs and sugar until thick and pale.

  3. Fold in flour gently.

  4. Add vanilla and melted butter.

  5. Pour into a square baking pan.

  6. Bake 20–25 minutes.

  7. Cool completely.

  3. Blend if desired.

  4. Cool completely.

Step 4: Make the Whipped Cream

  1. Beat cold heavy cream.

  2. Add powdered sugar and vanilla.

  3. Whip to medium-stiff peaks.

Step 5: Assemble

  1. Spread whipped cream over the chilled cheesecake layer.

  2. Cut into neat squares.

  3. Decorate each piece with assorted fruit.

  4. Drizzle berry sauce down the sides as shown in the photo.

  5. Dust lightly with powdered sugar.
