Ingredients

For the Shrimp

  • 500 g large shrimp, peeled and deveined

  • 1 cup all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp cayenne pepper

  • Salt and black pepper to taste

  • 2 eggs, beaten

  • 1 cup panko breadcrumbs

  • Vegetable oil for frying

For the Mango Avocado Salsa

  • 1 ripe mango, diced

  • 1 avocado, diced

  • ¼ cup red onion, finely chopped

  • 2 tbsp fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste

For Assembly

  • 8 small corn tortillas

  • Fresh cilantro

  • Lime wedges

Instructions

  1. Pat shrimp dry and season lightly with salt and pepper.

  2. In one bowl, mix flour, paprika, garlic powder, cayenne, salt, and pepper.

  3. Place beaten eggs in a second bowl and panko breadcrumbs in a third bowl.

  4. Coat shrimp in flour, dip into egg, then cover with breadcrumbs.

  5. Heat oil to 350°F (175°C) and fry shrimp for 2–3 minutes until golden brown.

  6. Transfer to paper towels to drain excess oil.

  7. Combine mango, avocado, onion, cilantro, lime juice, and salt to make the salsa.

  8. Warm tortillas in a skillet.

  9. Fill each tortilla with shrimp and top generously with mango-avocado salsa.

  10. Garnish with cilantro and serve with lime wedges.
