200ml sweetened condensed milk

200ml coconut milk

A handful of roasted peanuts (lightly crushed)

Prepare the bananas:
Peel the bananas and slice each one lengthwise into three thin strips. Set aside. -
Mix the base:
In a large mixing bowl, combine the yogurt, condensed milk, and coconut milk. Whisk until smooth and creamy. -
Layer it up:
Take a plastic container (or aluminum tray for quicker freezing). Start by pouring a thin layer of the milk mixture into the bottom of the container.
Arrange a layer of sliced bananas on top, then sprinkle with roasted peanuts and shredded coconut.
Repeat the layers – milk mixture, banana slices, peanuts, and coconut – until all ingredients are used up. Finish with a final sprinkle of peanuts and coconut for that perfect top layer. -
Freeze:
Cover the container and place it in the freezer for 5 to 8 hours, or until completely frozen. -
Before serving:
Let the ice cream rest in the fridge for about 30 minutes before scooping. This helps soften it slightly and brings out the creaminess.
