Garlic Shrimp Stir-Fry with Vegetables and Cashews

A quick, easy, and incredibly flavorful recipe!

Ingredients:

  • 450 g (1 lb) shrimp, peeled and deveined
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large onion, sliced into thin strips
  • 1 red bell pepper, cut into strips
  • 1 carrot, thinly sliced
  • 1 cup broccoli, cut into florets
  • 1/2 cup cashews (raw or roasted)
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger, grated

Instructions:

  1. Season the shrimp with salt and black pepper.

  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until they turn pink. Remove and set aside.

  3. In the same pan, add the remaining olive oil, followed by the garlic, onion, and ginger. Sauté for 1-2 minutes until fragrant.

  4. Add the bell pepper, carrot, and broccoli, and stir-fry for 3-4 minutes until they begin to soften but remain slightly crisp.

  5. Return the shrimp to the pan, then add the cashews, soy sauce, and honey. Stir everything together and cook for 2 more minutes, allowing the flavors to blend.

  6. Remove from heat and serve immediately.
