
Garlic Shrimp Stir-Fry with Vegetables and Cashews

A quick, easy, and incredibly flavorful recipe!
Perfect for a healthy and delicious meal.
Ingredients:
- 450 g (1 lb) shrimp, peeled and deveined
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large onion, sliced into thin strips
- 1 red bell pepper, cut into strips
- 1 carrot, thinly sliced
- 1 cup broccoli, cut into florets
- 1/2 cup cashews (raw or roasted)
- 2 tablespoons soy sauce
- 1 teaspoon honey
- 1 teaspoon fresh ginger, grated
Instructions:

Season the shrimp with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until they turn pink. Remove and set aside.

In the same pan, add the remaining olive oil, followed by the garlic, onion, and ginger. Sauté for 1-2 minutes until fragrant.

Add the bell pepper, carrot, and broccoli, and stir-fry for 3-4 minutes until they begin to soften but remain slightly crisp.

Return the shrimp to the pan, then add the cashews, soy sauce, and honey. Stir everything together and cook for 2 more minutes, allowing the flavors to blend.

Remove from heat and serve immediately.
