Ingredients (Serves 4)

Protein

  • 2 boneless skinless chicken breasts

  • 12 large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp dried thyme

  • Salt and black pepper to taste

Vegetables

  • 1 cup cherry tomatoes

  • 1 zucchini, sliced

  • 1 ear corn, cut into rounds

  • 1 tbsp olive oil

  • Salt and pepper

Garlic Butter Glaze

  • 3 tbsp butter

  • 3 garlic cloves, minced

  • 1 tbsp honey

  • 1 tsp lemon juice

  • 1 tbsp chopped parsley

Garnish

  • Fresh parsley leaves

  • Lemon wedges

Instructions

Step 1: Season the Chicken and Shrimp

  1. Toss chicken and shrimp with olive oil, paprika, garlic powder, thyme, salt, and pepper.

  2. Let marinate for 15 minutes.

Step 2: Roast the Vegetables

  1. Preheat oven to 425°F (220°C).

  2. Toss tomatoes, zucchini, and corn with olive oil, salt, and pepper.

  3. Roast for 15–18 minutes until tender.

Step 3: Cook the Chicken

  1. Heat a grill pan or skillet over medium-high heat.

  2. Cook chicken for 5–6 minutes per side until golden and cooked through.

  3. Rest for 5 minutes before slicing.

Step 4: Cook the Shrimp

  1. In the same pan, cook shrimp for 2 minutes per side until pink and slightly charred.

  2. Remove from heat.

Step 5: Make the Garlic Butter Glaze

  1. Melt butter in a small saucepan.

  2. Add garlic and cook for 30 seconds.

  3. Stir in honey, lemon juice, and parsley.

  4. Simmer for 1 minute.

Step 6: Assemble

  1. Arrange roasted vegetables on serving plates.

  2. Add grilled chicken and shrimp.

  3. Drizzle generously with garlic butter glaze.

  4. Garnish with parsley and lemon wedges.
