  • 1 tsp fresh thyme leaves

  • 1 tsp fresh rosemary, finely chopped (optional)

  • Freshly ground black pepper

  • Pinch of flaky sea salt

For Serving

  • 1 baguette, sliced

  • 2 tbsp olive oil

  • Fresh thyme sprigs

  • Apple slices, pear slices, or grapes (optional)

Instructions

Step 1: Toast the Bread

  1. Preheat the oven to 400°F (200°C).

  2. Arrange baguette slices on a baking sheet.

  3. Brush lightly with olive oil.

Step 2: Prepare the Brie

  1. Place the Brie wheel in a small baking dish or cast-iron skillet.

  • Add fresh thyme and rosemary.

  • Season with a pinch of flaky sea salt and freshly cracked black pepper.

Step 5: Finish & Serve

  1. Remove from the oven.

  2. Drizzle with the remaining honey.

  3. Garnish with extra thyme.

  4. Serve immediately with toasted baguette slices and fresh fruit.

  • Toast the walnuts first to enhance their flavor and crunch.
