Crust

Strawberry Cheesecake Filling

16 oz (450 g) cream cheese, softened

Β½ cup (100 g) granulated sugar

1 tsp vanilla extract

1 cup (240 ml) heavy whipping cream

1 cup fresh strawberries, pureed

2 tsp powdered gelatin (or 1 tsp agar-agar)

2 tbsp warm water
Strawberry Glaze

1 cup strawberry puree

2 tbsp sugar

1 tsp cornstarch

1 tbsp water
Garnish
-
Fresh strawberries, sliced

Graham cracker crumbs

Instructions
Step 1: Prepare the Crust

Combine graham cracker crumbs, sugar, and melted butter.

Press about 1 tablespoon into the bottom of each mini cheesecake mold or muffin liner.

Refrigerate for 20 minutes.
Step 2: Make the Filling

Beat the cream cheese until smooth.
