1 orange, segmented

½ cup pomegranate arils

¼ small red onion, very thinly sliced

2 tbsp fresh cilantro leaves

Instructions
Step 1: Prepare the Scallops

Pat the scallops dry with paper towels.

Using a very sharp knife, slice each scallop into 3–4 thin rounds.

Arrange the slices evenly on chilled serving plates.
Step 2: Make the Dressing

Whisk together olive oil, orange juice, lemon juice, lime zest, honey, Dijon mustard, salt, pepper, and red pepper flakes.
