Ingredients (Serves 4)

Main Ingredients

  • 2 lbs (900 g) fresh clams, cleaned

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 small shallot, finely diced

  • ½ tsp red pepper flakes

  • 1 cup heavy cream

  • ½ cup dry white wine

  • ¼ cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped

  • Salt and black pepper, to taste

For Serving

  • Crusty toasted bread

  • Lemon wedges

Instructions

Step 1: Prepare the Clams

  1. Rinse clams thoroughly under cold water.

  2. Discard any cracked shells or clams that remain open when tapped.

Step 2: Make the Sauce

  1. Heat butter and olive oil in a large skillet over medium heat.

  2. Add shallot and cook for 2 minutes.

  3. Stir in garlic and red pepper flakes; cook for 30 seconds until fragrant.

  4. Pour in the white wine and simmer for 2–3 minutes.

Step 3: Cook the Clams

  1. Add clams to the skillet.

  2. Cover and steam for 5–7 minutes until shells open.

  3. Discard any clams that do not open.

Step 4: Finish the Dish

  1. Lower the heat.

  2. Stir in heavy cream and Parmesan cheese.

  3. Simmer gently for 2–3 minutes until slightly thickened.

  4. Season with salt and pepper.

  5. Sprinkle with fresh parsley.

Step 5: Serve

  1. Serve immediately with toasted bread for dipping.

  2. Add fresh lemon wedges on the side.
